Ingredients

  • 0.7 oz (20 g) agar-agar powder
  • 2.1 cups (500 ml) cold water, for soaking
  • 10.6 oz (300 g) agave nectar, plus more to taste
  • 0.8 cup (200 ml) warm water, for the agave nectar
  • 2 medium oranges, juiced — about ½ cup (120 ml) juice
  • 1 medium lemon, juiced — about 2½ tbsp (35 ml) juice

Method

  1. Soak the agar-agar in the cold water for at least 1 hour, until it has swollen and softened.
  2. Squeeze the juice from the oranges and the lemon, and strain out any seeds.
  3. Pour the warm water into a bowl and stir in the agave nectar until it is completely dissolved.
  4. While the agave nectar dissolves, pour the soaked agar-agar into a saucepan, bring it to a boil over medium heat, and boil for 1–2 minutes, stirring often.
  5. Mix the boiled agar-agar liquid with the agave nectar water and the fresh citrus juice, then pour the mixture into molds.
  6. Leave the jelly to set until firm, about 1 hour at room temperature, then unmold and serve.
